1. Green Goddess Pancakes with Coconut Cream 

Preparation Time: 10 minutes

Cooking Time: 10 minutes

Number of Servings: 4 people (3 pancakes each)

Ingredients

400ml of Milk

2 tbsp of Green Goddess Powder

1 Whisked Egg

300 grams of Plain Flour

60 grams of Sugar

A pinch of salt

Juice of 1 Lemon

1 tsp of Baking Powder

2 tbsp of butter

Refrigerated Coconut Milk

2 tbsp of Icing Sugar

2 tbsp of Desiccated Coconut

Method

  1. In a bowl whisk the milk, egg and Green Goddess Powder
  2. In a separate bowl, mix the dry ingredients – plain flour, sugar, salt and baking powder
  3. Slowly melt the butter until liquid.
  4. Combine the dry and wet ingredients into one bowl. Then gradually add the butter to the mix.
  5. Finally add lemon juice to the batter.
  6. Preheat your pan and use butter/oil/fry light
  7. Add a small amount of batter to the pan and batch cook your pancakes on medium heat. Simply cook on 2-3 minutes each side until golden brown.
  8. In the meantime, mix the firm part of coconut milk, then add icing sugar and desiccated coconut.
  9. Serve and add the whipped coconut cream- Enjoy!
2. Super Green Souffle

Preparation Time: 1 hour 15 minutes

Cooking Time: 15 minutes

Number of Servings: 4

Ingredients

1 Tbsp of butter

150ml milk

100ml double cream

3 large eggs (separated into whites and yolks)

10 Tbsp sugar

3 Tbsp plain flour

2 Tbsp Green Goddess Powder

Method

  1. Preheat the oven to 200ºC
  2. Now to prepare the ramekins. Brush the insides of the ramekin with soft butter. Then coat all sides and edges of the souffle ramekins with sugar. Use only 4 Tbsp of the sugar listed in ingredients list.
  3. In a bowl whisk the egg yolks and 2 tbsp of sugar.
  4. Sift the plain flour to remove lumps then add this to the egg and sugar mixture. Whisk thoroughly.
  5. Add the milk and cream to a saucepan and heat until a simmer. Do not boil.
  6. Once the milk is warmed, add a small splash of warm milk into the egg mixture and whisk until smooth.
  7. Gradually add the milk until the mixtures comes up to temperature.
  8. Add the mixture back to the pan on a medium heat. Consistently whisk until the mixture thickened.
  9. Once thickened transfer into a room temperature bowl to stop the cooking process. This can take 20-30 minutes.
  10. Once cooled, sift the green goddess powder into the thickened custard mix. Put the mixture to the side.
  11. In a new bowl, mix the egg whites until it appears frothy.
  12. When bubbles appear gradually add the 4-remaining tbsp of sugar to the mix.
  13. Once the meringue appears glossy gradually add the meringue into the custard mix and fold until fully mixed. Do not over mix.
  14. Divide the souffle mix into the ramekins. Then tap the ramekins to level the mixture.
  15. Bake the souffles for 13 minutes until risen and with a slight wobble.

3. Green Protein Energy Balls

Preparation Time: 15 minutes

Cooking Time: None

Number of Servings: 5

Ingredients 

1 Tbsp of Green Goddess Powder

120 grams of Ground Almonds

2 Medjool Dates

2 Tbsp of Maple Syrup

100 grams of Peanut Butter

Desiccated Coconut for Coating Only

Method

  1. Blend the dates with the maple syrup.
  2. Combine all ingredients in a bowl until they make a firm playdough like texture.
  3. Take small amount of the mixture and roll into a ball.
  4. Roll in desiccated coconut and refrigerate for at least 2 hours.

4.Green Goddess Pina Colada N-ice Cream

Preparation Time: 10 minutes

Cooking Time: None

Number of Servings: 2

Ingredients

1/2 Tbsp of Green Goddess Powder

2 frozen bananas

120 grams frozen pineapple

80ml of coconut milk

1 tsp of maple syrup or sweetener

Method 

Add all the ingredients to the blender and blend until smooth and free of lumps.

If you like soft serve enjoy now. Or place in the freezer for 1-2 hours for a more firm serve.

5. Marvellously Nutritious Green Soup

Preparation Time: 20 minutes

Cooking Time: 20 minutes

Number of Servings: 4 

Ingredients

2 tbsp olive oil

1 leek chopped and washed

3 garlic cloves

1 courgette

2 celery stalks

100 grams of peas

2 Tbsp of Green Goddess

1 green bell pepper

1 bunch of asparagus

3 handfuls of spinach, chopped and washed

50 grams of fresh coriander

50 grams of fresh parsley

Sat and pepper to taste

1 tbsp of fresh lemon juice

4 litres of vegetable stock

1 can of butter beans

Method 

  1. Add the oil to a large pan and heat on a medium heat.
  2. Chop the garlic, leeks, celery, courgette green peppers and add them to the pan. Fry until softened.
  3. Prepare the stock according to the packet instructions. Then add the Green Goddess Powder.
  4. Reduce the heat to a simmer and add the stock. Leave to simmer for 20 minutes.
  5. 15 minutes into simmering add the peas, asparagus, spinach, coriander and parsley.
  6. After the full 20 minutes, add the lemon juice, seasonings and butter beans. Leave to simmer for a further 5 minutes
  7. Serve with a big chunk of wholemeal bread.
