Ingredients
3 medium ripe bananas
150 grams wholewheat or plain flour
3 servings (75 grams) of Fruit Punch Protein Powder
1tsp baking powder
2 eggs
75grams of melted and cooled butter
125 grams of natural Greek yoghurt
5 Tbsp of maple syrup
1 tsp cinnamon
1tsp vanilla extract
50grams of chopped nuts of your preference
Salt to taste
Methods
- Preheat the oven to 170 degrees
- In a large bowl mix the following wet ingredients, mashed bananas, yoghurt, maple syrup, and vanilla extract
- In a different bowl, mix the dry ingredients, flour, fruit punch protein powder, baking soda, cinnamon and salt
- Add the dry ingredients to the wet ingredients and mix until just combined
- Then mix the melted butter and chopped nuts
- Prepare a loaf tin by greasing the tin, and adding baking paper
- Pour the banana bread mixture into the tin and place it in the oven
- Bake for around 60 minutes. Keep an eye that the top doesn’t burn, if it starts to catch add a layer of tin foil on the top. You will know when the banana bread is cooked by poking the middle with a skewer, if it comes out clean it is baked through, if it does not, it needs longer baking
- Leave to cool and enjoy!
