Banana bread has earned its place as a supreme snack and dessert item. Not just in the lockdown but for every day. We are Nutrified's Go Bananas Banana Bread is packed full of Vegan Protein. 

Preparation Time – 70 mins

Difficulty – Medium

Serves – 12

Ingredients

3 medium ripe bananas 

150 grams wholewheat or plain flour 

3 servings (75 grams) of Fruit Punch Protein Powder 

1tsp baking powder 

2 eggs 

75grams of melted and cooled butter 

125 grams of natural Greek yoghurt 

5 Tbsp of maple syrup 

1 tsp cinnamon 

1tsp vanilla extract 

50grams of chopped nuts of your preference 

Salt to taste 

Methods

  1. Preheat the oven to 170 degrees 
  2. In a large bowl mix the following wet ingredients, mashed bananas, yoghurt, maple syrup, and vanilla extract
  3. In a different bowl, mix the dry ingredients, flour, fruit punch protein powder, baking soda, cinnamon and salt
  4. Add the dry ingredients to the wet ingredients and mix until just combined
  5. Then mix the melted butter and chopped nuts
  6. Prepare a loaf tin by greasing the tin, and adding baking paper
  7. Pour the banana bread mixture into the tin and place it in the oven 
  8. Bake for around 60 minutes. Keep an eye that the top doesn’t burn, if it starts to catch add a layer of tin foil on the top. You will know when the banana bread is cooked by poking the middle with a skewer, if it comes out clean it is baked through, if it does not, it needs longer baking
  9. Leave to cool and enjoy!
