Who said dessert can't be nutritious and Scrumptious? The super green souffle is a light fluffy dessert with 9 types of greens. 

Preparation Time - 1 hour 30 mins

Serves 4

Ingredients

1 Tbsp of butter

150ml milk

100ml double cream

3 large eggs (separated into whites and yolks)

10 Tbsp sugar

3 Tbsp plain flour

2 Tbsp Green Goddess Powder

Methods

  1. Preheat the oven to 200ºC
  2. Now to prepare the ramekins. Brush the insides of the ramekin with soft butter. Then coat all sides and edges of the souffle ramekins with sugar. Use only 4 Tbsp of the sugar listed in ingredients list.
  3. In a bowl whisk the egg yolks and 2 tbsp of sugar.
  4. Sift the plain flour to remove lumps then add this to the egg and sugar mixture. Whisk thoroughly.
  5. Add the milk and cream to a saucepan and heat until a simmer. Do not boil. Once the milk is warmed, add a small splash of warm milk into the egg mixture and whisk until smooth.
  6. Gradually add the milk until the mixtures comes up to temperature.
  7. Add the mixture back to the pan on a medium heat. Consistently whisk until the mixture thickened.
  8. Once thickened transfer into a room temperature bowl to stop the cooking process. This can take 20-30 minutes.
  9. Once cooled, sift the green goddess powder into the thickened custard mix. Put the mixture to the side.
  10. In a new bowl, mix the egg whites until it appears frothy.
  11. When bubbles appear gradually add the 4-remaining tbsp of sugar to the mix.
  12. Once the meringue appears glossy gradually add the meringue into the custard mix and fold until fully mixed. Do not over mix.
  13. Divide the souffle mix into the ramekins. Then tap the ramekins to level the mixture
  14. Bake the souffles for 13 minutes until risen and with a slight wobble.
